My Plate is Full and I’m Hungry for More!

I have a lot on my plate. Not a literal plate of food, but the imaginary plate we use to describe how busy our lives are.
Between my full time job, teaching part time, blogging (even in its current limited form), family life, and a host of other things I’m working on…I’ve got a lot to do these days. I’m not complaining, just acknowledging that fact.
Driving home the other day, I went down my “to-do” list and it seems to be growing by the minute. Everything is such a balancing act for me right now. It’s a bit overwhelming. But as I think about everything on my to-do list, I realize this is par for the course on the path to greatness.
I put so much on my plate because I have an appetite for success and I’m going to tackle each portion of my life’s meal one by one, until I reach my goals. I feel so hungry!
I’m hungry for more out of life!
I’m hungry for a new lifestyle – the one of abundance that I’ve always dreamed of having.
I’m hungry to be a better me.
I’m hungry for God.
I’m just…hungry! Ready! Willing!

Easy Eats: Delicious Enchiladas in just 30 Minutes!

This recipe is one of my all-time favorites!
It’s devastatingly easy and yields a delicious and filling meal with minimal prep and cook time.
Ingredients List:
1lb of boneless, skinless chicken breast (cubed)
1 pk of Lawry’s Chicken Fajita seasoning (optional)
1-2 tablespoons of Canola oil
1 15oz can of enchilada sauce
1 15oz can of corn (I also use frozen sweet corn)
1 pack of corn tortillas (you’ll use about 12)
2 cups of shredded cheese
Steps:
1. Cube and brown the chicken (season with the Lawry’s mix)
2. Cut the 12 tortillas into strips then set aside
3. Mix the chicken, corn, tortillas, enchilada sauce, and 1 1/2 cup of cheese in a bowl
4. Pour the mixture in a casserole dish
5. Add remaining cheese on top and bake for 25 – 30 minutes
Notes:
Be sure to pre-heat the oven before you start preparing the meal.
The Lawry’s Chicken Fajita seasoning mix is not pictured. It’s optional. I like it because it gives the chicken an extra kick of flavor!
I place larger tortilla triangles at the bottom of the casserole dish to make it firm and easier to cut when it’s ready.
I used a Mexican blend of cheeses, but you can use whatever you prefer.
You can also add whatever garnishes you may like as well, such as sour cream, guacamole, or olives.

How to Make a Homemade Iced Mocha

You’ve read here before about how much #iDie for Iced Mochas from McDonald’s.
Well tonight I decided to try making one straight outta my kitchen!
I did some quick Googling to get an idea for a recipe and this is what I came up with.
- I made a fresh pot of coffee.
- Poured out 1 cup of coffee into a large measuring cup.
- I added 2 tablespoons of brown sugar and a drop of vanilla to sweeten.
- I poured a cup of milk into a separate measuring cup.
- Then I got a tumbler and added some chocolate syrup to the bottom and filled it up with ice.
- Next, I poured the coffee and milk into the tumbler together, so as not to fully melt the ice.
- I added some more chocolate syrup (a lot of it!) then gave it a quick stir.
- I added some whipped cream for fancy’s sake and boom! Done.

The Finished Product!
It took all of 5-10 minutes.
Now I will drink my beverage and stay up all night. LOL

I was perusing through my Google reader and found a photo challenge that my girl, Christina from Being Mrs. Jones is participating in. You simply snap your interpretation of a prompt with a camera and post! There’s one for every day of the month of March. I’ve always wanted to do some type of challenge, so I figured, why not?!
I’ve got just a few more minutes before Day 1 is over, so here goes! The word “UP” was the prompt.

This picture is old, but I had to use something for my first post. I may not get the chance to post every photo I take here daily, but I will share as many as I can, when I can.
